Eire of Magic (Oakey)

Eire of Magic is trained on the gold Coast by David Kelly and he is owned by John Joyce and Wayne Pope along with a 3rd partner John Burns.
Oakey as he is fondly known as, in the stables,  recently raced in the Prime Ministers Cup at the Gold Coast Race Club.. 7th May...Well he was called the winner - but ended up in a photo finish coming 2nd but it was worth the trip up there to see him race...especially with such an exciting finish.  Oakeys racing colors had disappeared in the Jockeys room and were unable to be found prior to the race so he ended up racing in the  Club colors.  Wayne, his wife Michelle, John and I along with some friends that are always there when Oakey races took David and his partner and one of the young strappers out for dinner at UNO's at BroadBeach...very beautiful Italian food and I will certainly visit there again.

Next Day John and I drove up to Brisbane to see Shane, Cassie and our beautiful grandson Noah...Shane asked us to meet him at Hogsbreath as they had the restaurant open for Mothers Day Brekkie...Yummo!  It was a huge brekkie and I enjoyed it immensley!  Then off we went shopping at Chermside and I spent some of my race winnings on a Breville Mixmaster.....which when we arrived home and I unpacked the box...It was missing a beater and also had a huge scratch on the top of it...Down to Target the next day  to have it replaced and they did without a query....Also called into DFO on our way back down to the Gold Coast and bought some new kitchen gadgets........I love looking through Kitchen shops!
Drove home Monday after going around to the stables to see how Oakey was after his big race....He was eating up a treat....and looked great!

Tuesday was rest day...

Wednesday was a day of cooking....Date Slice...Need to find a better recipe..this one was not all that good. Also cooked another Lumberjack Cake and a Caramel Walnut slice....Which I will definitely be making again....It was enjoyed by everyone that had a piece.

Thursday and Friday...back to work....That was last week taken care of....

Last Saturday...My friend Lynne and I went to the Artists and Farmers Market at WestPort Park.
Bought some lovely fresh food. After the markets we went down town to do a few chores..then off to Spotlight and Lincraft to buy some wool to try and make a copy of a scarf that we had seen at the Markets....looking forward to making the scarf on Wednesday.  Will try and take a photo to upload.

Well that has been the extent of my life for the last week or so....

Cheers Annette

Nanny's Lemon Meringue

Well that bag of lemons I was given by Trish is being put to good use...I have been making Lemon Meringue Pie.. made the 1st one yesterday for John and I and made one for Justin today...Lemon Meringue is Justin's favorite...Nanny used to make it for him when he was a child and no-one could make it like Nanny.....and he would let them know....Mind you I have never made a lemon Meringue before and I have been cheating by using bought pastry...but next time I am going to make my own....
Photo coming later...

Justin's reaction... YUMMM!...Mum this is great...He is very impressed with my effort  *grins*

Nanny's Lemon Meringue Pie

1½ cups plain flour
3 teaspoons icing sugar
140gr butter
1 egg yolk lightly beaten
2 tbsp water, approximately

FILLING
½ cup cornflour
1 cup castor sugar
½ cup Lemon Juice
1¼ cups water
2 teaspoons grated lemon rind
3 egg yolks, lightly beaten
60gr unsalted butter

MERINGUE
3 egg whites
½ cup castor sugar

Method
Lightly grease 24cm flan tin
Sift flour & icing sugar into bowl, rub in butter.
Add yolk and enough water to make ingredients cling together.
Press dough into a ball, knead gently on lightly floured surface until smooth; cover, refrigerate for 30 minutes
Roll dough on lightly floured surface, large enough to line prepared tin; trim edges.
Place tin on oven tray, line pastry with paper, fill with dried beans or rice.
Bake in moderately hot oven 10 mins, remove paper and beans, bake further 10 mins or until pastry is lightly browned; cool to room temperature.
Spread filling into pastry case, top with Meringue.
Bake in moderate oven until meringue is lightly browned. Stand 5 mins before serving.
FILLING
Combine cornflour and sugar in pan, gradually stir in juice and water, stir until smooth. Stir over heat until mixture boils and thickens (mixture should be very thick). Reduce heat, simmer, stirring 30 seconds. Remove from heat, quickly stir in rind, yolks and butter, stir until butter is melted; cover, cool to room temperature.
MERINGUE
Beat egg whites in small bowl with electric mixer until soft peaks form, gradually add sugar, beat until dissolved between additions.

Store covered in refrigerator.

Harrington Hotel

John decided he need to go down to Tinonee to where a couple of our horses are agisted to pick up some paper work....So he rang some friends -   who said they would love to join us so we picked them up and off we went....Arrived in Tinonee and it decided to rain heavier so we stopped at Mondrook Cafe for a coffee until the rain stopped...then on to Tareena Stud...Far too wet to get out of the car to go and see the horses today...Caught up with Trish and Ian for a great chat - Trish gave us a heap of lemons...so it looks like there is going to be lemon meringue pie on the menu in the next couple of days....then the next question was..where to go for lunch...Off to Harrington Pub....Overlooking the water...where the meals are absolutley beautiful....Their Salt and Pepper Squid to die for...the plate was so full there was no way I could eat it all...but the other three made sure there was no food left on my plate....I am only wishing now that I had taken a photo of all the food....A couple of wines later and then we were on our way home....All in all it was a lovely  day out with great friends....
Here is a small article on the hotel    Harrington Hotel
